The Art of Distillation
Through a masterful combination of pot and column distillation, we capture the true essence of premium Jamaican rum. The traditional batch pot still process, alongside precise column distillation, creates the complex esters that give Jamaican rum its distinctive character—what locals call “funk.” Our master distillers, drawing from generations of expertise, oversee the critical processes of fermentation and distillation, while carefully managing the aging journey to craft our final product.
Time and Tropical Aging
Funk Harbor Rum showcases the pinnacle of Jamaican rum-making. Our silver rum emerges bright and vibrant directly from our masterful distillation process, while our dark rum undergoes a transformative 2-5 year tropical aging in carefully selected oak barrels beneath the Jamaican sun.
The Caribbean climate plays a crucial role in both—intensifying our aged rum’s interaction with oak to develop deep amber hues and distinct vanilla notes, while preserving the pure, clean character of our silver rum.
