Crafted exclusively for Meat on Ocean, Safe Harbor embodies this sense of arrival and comfort. Funk Harbor Silver Rum provides a smooth foundation, while fresh pineapple and lime deliver tropical brightness that recalls sun-drenched Caribbean shores. The subtle spice of falernum and cinnamon syrup adds warmth and depth, complemented by orange bitters for aromatic complexity. The finishing touch—an ethereal absinthe mist—transforms the drink into something almost mystical, like the first glimpse of safe shores through morning fog.

What You’ll Need

  • 2 oz Funk Harbor Silver Rum
  • 1 oz Fresh pineapple juice
  • ¾ oz Fresh lime juice
  • ½ oz Falernum
  • ½ oz Cinnamon syrup
  • 2 dashes Orange bitters
  • Topper: Absinthe mist
  • Garnish: Pineapple wedge and cinnamon stick (optional)

Putting it Together

  • Add Funk Harbor Silver Rum, fresh pineapple juice, fresh lime juice, falernum, cinnamon syrup, and orange bitters to a tall glass or tiki mug.
  • Fill the glass with crushed ice.
  • Using a bar spoon or swizzle stick, swizzle the drink by moving the spoon up and down between your palms until the outside of the glass frosts over.
  • Top with more crushed ice to create a mound above the rim.
  • Create an absinthe mist by adding a small amount of absinthe to an atomizer or spray bottle. Gently mist the top of the drink with 2-3 sprays.
  • Garnish with a pineapple wedge and cinnamon stick if desired.

The absinthe mist is what elevates this cocktail from delicious to extraordinary. The aromatics hit your nose before the first sip, preparing your palate for the complex flavors ahead. If you don’t have an atomizer, you can rinse a chilled glass with a small amount of absinthe before building the drink, or carefully float a few drops on top using a bar spoon.
