Dark and Stormy

Dark and Stormy

The Dark and Stormy is a cocktail with as much attitude as flavor—a drink that earned its name from the ominous, storm-cloud appearance of dark rum floating over pale ginger beer. Born in Bermuda over a century ago, it became the unofficial drink of sailors who’d mix whatever they had on hand after a long day at sea. The result? A simple but striking highball that’s both refreshing and bold. This is a drink that doesn’t ask for permission. The spicy kick of ginger beer meets the rich, molasses-forward depth of Funk Harbor Dark Rum, while a squeeze of fresh lime cuts through with bright acidity. The magic happens in the pour—that signature float of dark rum on top creates a dramatic visual that mirrors storm clouds rolling in over the ocean. As you sip, the layers gradually mix, each taste evolving from crisp and fiery to smooth and complex. Perfect for a hot afternoon or a night when you want something effortless but impressive, the Dark and Stormy is a reminder that sometimes the simplest combinations create the biggest impact. One sip and you’ll understand why this drink has weathered every trend and remained a classic.

1

Fill your glass with ice.

2

3

Pour ginger beer over the ice.

Slowly pour Funk Harbor Dark Rum over the back of a bar spoon to float it on top of the ginger beer, creating the signature layered “stormy” effect.

5

Garnish with a lime wheel on the rim of the glass.

Pro Tip

The key to a proper Dark and Stormy is the float. Pour the rum slowly over the back of a bar spoon held just above the surface of the ginger beer. This creates that dramatic layered look that gives the drink its name. As you sip, the layers will naturally blend, but starting with that visual separation makes all the difference. For the best flavor, use a high-quality ginger beer with real ginger bite (not ginger ale—there’s a difference!). The spicier the ginger beer, the better it stands up to the rich funk of the dark rum.
