This sophisticated cocktail was crafted exclusively for Water Grill, where premium seafood meets coastal elegance. The combination of Funk Harbor Silver Rum with tropical pineapple and bright lime creates a refreshing foundation, while the unexpected pairing of Crème de Cacao and hazelnut syrup adds layers of complexity. Topped with an espresso float, it’s a drink that defies expectations—just like the best nights out.

What You’ll Need

  • 2 oz Funk Harbor Silver Rum
  • 1 oz Pineapple juice
  • ¾ oz Fresh lime juice
  • ½ oz Crème de Cacao
  • ½ oz Hazelnut syrup
  • Topper: Espresso float
  • Garnish: Lime wheel (optional)

Putting it Together

  • Fill a cocktail shaker with ice.
  • Add Funk Harbor Silver Rum, pineapple juice, fresh lime juice, Crème de Cacao, and hazelnut syrup to the shaker.
  • Shake vigorously until well-chilled.
  • Strain into a tall glass or tiki mug filled with crushed ice.
  • Gently pour a shot of espresso over the back of a bar spoon to create a float on top of the drink.
  • Garnish with a lime wheel if desired.
